Beef and Veggie Stir-Fry
Ingredients:
- 1 lb (450g) flank steak or sirloin, thinly sliced
- 2 tablespoons soy sauce (low-sodium)
- 2 tablespoons hoisin sauce
- 1 tablespoon sesame oil (or vegetable oil)
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 carrot, thinly sliced
- 1 small onion, sliced
- 2 green onions, chopped (for garnish)
- 1 tablespoon sesame seeds (optional for garnish)
- Cooked brown rice or quinoa (for serving)
Instructions:
- Marinate the beef: In a bowl, mix soy sauce, hoisin sauce, sesame oil, honey, garlic, and ginger. Add the sliced beef and let it marinate for 10-15 minutes.
- Cook the veggies: Heat a large pan or wok over medium-high heat. Add a splash of oil and stir-fry the broccoli, carrots, red bell pepper, and onion for 4-5 minutes, until just tender but still crisp. Remove the veggies from the pan and set aside.
- Cook the beef: In the same pan, add the marinated beef (with the sauce) and cook for 3-4 minutes until browned and cooked through.
- Combine: Return the veggies to the pan with the beef. Stir everything together and cook for another 1-2 minutes to heat through.
- Serve: Top with chopped green onions and sesame seeds, and serve over brown rice or quinoa.
